A high-protein, high-fat breakfast to fuel you up!
All you need:
2 free-range/ organic eggs (runny eggs is best!)
1 teaspoon of oil (MCT or extra virgin olive oil)
1 1/2 cups arugula
1-2 tablespoons sun-dried tomatoes (soaked in olive oil)
2 tablespoons (1 oz.) of shredded manchego cheese (sheep-milk cheese)
1/2 cup kimchi (Korean-style fermented vegetables, available at many grocers)
Pinch of sea salt
Optional: pinch of cayenne
Dressing for greens:
1 teaspoon MCT or extra virgin olive oil
1/2 teaspoon lemon juice
Pinch of sea salt
Fry eggs in a pan with oil, sprinkling with a pinch of sea salt and cayenne. While eggs are frying, toss arugula with sun-dried tomatoes, oil, lemon juice and shredded manchego cheese. Plate fried eggs, arugula and side of kimchi.
