Tastes like a decadent chocolate truffle, but fashioned for good gut health and a healthy dessert! Even kids like these! Ingredients:
1 cup pitted prunes
~10 dates
10 tbsp ground flax seed (~1/2 cup)
4 scoops protein powder (~1/4 cup; I used rice protein powder)
1 tbsp vanilla
2 tbsp cocoa powder
1/4-1/2 cup dark chocolate chips (dairy-free, nut-free)
1 tbsp coconut oil
Blend all ingredients in a food processor and form into 1.5” balls. Sprinkle lightly with sea salt. Place in a container lined with parchment paper. Freeze for about 10-min, and then store in fridge (they can get messy when kept at room temperature).
